Classic Chicken Soup

Last night we had a simple yet delightful dinner. We had lots of time to enjoy chatting, the snow and even have the neighbours over after a fun ride on their quad.
This recipe is full of veggies, low fat and low sodium. Freezes well. And delicious!
The perfect meal for a snowy night pairs well with a baguette (Superstore  $0.94 and one of the best for texture and taste). J Lohr Chardonnay or Oyster Bay Sauvignon Blanc is a nice addition too.
You can make stock from scratch or purchase 4 tetra packs of low sodium chicken broth, 1 vegetable tetra pack and 1 beef tetra pack (this is the secret ingredient). No name is fine. The beef stock gives the soup added body and adds another layer to the taste of the broth.
We added the following to the broth:
2 medium diced cooking onions
6 cloves of garlic chopped
1 tsp dried Oregano
1/2 tsp dried Thyme
1 tsp poultry seasoning
1/2 tsp Basil
1 tsp savoury (if you can find summer savoury use it. It’s amazing!)
4 bay leaves
Salt and Pepper to taste
6 celery stalks chopped (we love celery)
8-10 carrots 3/4” on the diagonal
1 bunch Green beans
2 parsnips cubed
1 small to medium Turnip cubed
1 small Rutabaga cubed
1/4 head of Green cabbage sliced or shredded
4 single Chicken Breasts cubed
