December Recipe Guide

It’s officially December, and with this chilly month comes delicious and warming new recipes to try! Keep reading for my favourite selections from my go-to Half-Baked Harvest.

Let’s start with the coziest bowl of Wild Rice and Orzo Chicken Soup to welcome these long, cold December nights.

Made with wild rice, herbs, orzo pasta, and chicken. It’s a hearty warming meal to enjoy any night of the week. Just throw everything into the instant pot or slow cooker, set it, and walk away. Add a little browned sage butter just before serving. The browned butter takes just minutes to make but adds a wonderful layer of deliciousness to this creamy soup. Every spoonful is so delicious with a side of bread.

Next up we have a fantastic, simple weeknight Coconut Chicken Meatball Curry with Rice Noodles.

Made with flavorful Thai curry paste, coconut milk, plenty of fresh herbs, and lime juice. Then toss in seared chicken meatballs and plenty of delicious rice noodles and it’s hard to beat this easy Thai-inspired coconut curry. It’s a delicious mix of cozy and healthy and a great way to use up those garden bell peppers and fresh basil.

For those of you out there that are pizza lovers like myself, you need to try this Caramelized Shallot and Bacon Goat Cheese Pizza.

Homemade pizza dough topped with fresh summer tomatoes, tangy goat cheese, crisp bacon, basil, lots of melty cheese, and sweet and delicious caramelized shallots. Oh, and some fresh thyme and chili flakes too. Once the pizza is just out of the oven, finish with fresh basil. If you love a cheesy pizza, this is about to become a new weeknight dinner staple. Serve this cheesy pizza right out of the oven for a truly simple dinner that everyone will love.

These Slice ‘n’ Bake Vanilla Bean Sugar Cookies are calling my name – made with brown sugar, real vanilla, and a little bit of hazelnut liquor and almond extract to bring out the vanilla flavour. These cookies are soft, buttery, and perfectly sweet with the best vanilla flavor and notes of brown sugar. They’re generously frosted with a thick and creamy whipped caramel buttercream frosting. Then decorated with festive holiday sprinkles. The combination of real vanilla, brown sugar, and almond extract, keeps these cookies incredibly flavourful!

Last but most certainly not least we have Gingerbread Cupcakes with Cinnamon Browned Butter Buttercream.

Sweet gingery cupcakes made with brown sugar, molasses and a touch of vanilla extract. Then baked up and frosted with a cinnamon infused buttercream. These cupcakes are moist, full of warming spices, so delicious, and simple enough to make any day of the week for a fun December treat.
