Leftovers…How about Pizza?

We are always trying to find ways to use up our leftovers. My kids are not huge fans so I usually have to hide them in or on something. Last night we had pizza. The “Monkey” ate 4 pieces!

This is what we did and it was delicious. First, take a pizza crust and use tomato paste, pesto or spaghetti sauce as your base. Whatever you have on hand. Then add your toppings.

We used pesto with roasted veggies (artichokes,
peppers and red onion). Costco has grilled veggies in a jar, if you are looking for some. Top with mozzarella cheese and feta.

We had some amazing Tandoori chicken leftover that my friend, Krista made. She swears by the spice mix which can be found at Save On for $4.49. Krista always makes yummy things!

We put everything in the oven at 425 for about 15 minutes. Keep an eye on it as ovens vary and it will depend if you are using raw pizza crust or already baked.

Then…this was the key to the amazing taste….we finished the pizza with balsamic glaze. Superstore has a nice inexpensive one for $2.98.
