By all accounts, Vancouver weather has been feeling like we’re in the middle of Summer. To accommodate the temperatures, I’ve compiled a list of delicious recipes that are absolutely perfect for the heat!

To get us started we have one of my favourite spring / summer recipes, this Greek Watermelon Feta Salad with Basil Vinaigrette.

A simple and healthy Greek Watermelon Feta Salad with Basil Vinaigrette. Sweet and juicy watermelon, fresh cherry tomatoes, cucumbers, salty olives, and feta cheese are combined to create a refreshing summer salad that’s pretty and so delicious. Finish this quick and simple salad with a drizzle of basily balsamic vinaigrette and flaky seas salt. Every bite bursts in your mouth with sweet watermelon, tomatoes, and salty feta cheese.

Next up we have this 3 Cheese Zucchini “Ravioli” with Roasted Tomato Basil Sauce.

Zucchini wrapped around a bundle of cheese, then served over warm herb roasted tomatoes. This recipe is perfect on those busy week days!

Another great weekday recipe is this Saucy Pineapple BBQ Chicken Bowl.

Shredded chicken in a sweet and spicy pineapple BBQ sauce. All made in the instant pot (along with slow cooker and stove-top variations). Serve this up bowl style…with quinoa, fresh pineapple salsa, avocado, and crispy fried garlic chips. Bonus, this saucy BBQ chicken is great leftover for lunch. Pile it high onto your favorite toasted bun for a yummy BBQ chicken sandwich. The perfect weeknight dinner…comes together in minutes and so delicious too!

This recipe has to be one of my all time favourites – Caprese Pesto Pasta Bake.

A fresh and easy spring dinner the entire family will enjoy. Pasta tossed with slowly roasted cherry tomatoes, basil pesto, burrata cheese, and prosciutto. All baked until the cheese is melty and the prosciutto extra crisp. The perfect spring pasta bake that’s melt in your mouth good. Sure to be a dinner you’ll make on repeat!

For those of you with a sweet tooth, I highly recommend this No Fuss Lemon Tart which is that go-to dessert!

Super easy, yet delicious and pretty too. The filling is made with four base ingredients, heavy cream, honey, lemon, and vanilla extract. The crust is a mix of sweet graham crackers, salty pretzels, and just a touch of butter. When combined with the creamy lemon filling it makes for a mouthwatering tart that’s sweet, luscious, super creamy, and a touch salty. Top with an assortment of fresh berries for a tart that’s perfect for both spring and summer.
