Weekend Recipes

With February coming to an end, this weekend is calling me to unwind, eat good food, and get cozy by the fire. If you’re feeling the same way, keep reading to find mouth watering recipes to try this weekend – they are the perfect dishes for a cozy time at home.

Let’s begin with your first meal of the day!

Have you ever tried a Persian-style omelette? This dish, similar to shakshuka, is a slow-cooked breakfast often enjoyed by Persian families together. I grew up having this breakfast a few times a month with my family and have recently rediscovered it. This is my new Saturday morning breakfast ritual and I am absolutely loving it.

The recipe usually includes tomatoes, extra virgin olive oil, pasture-raised eggs and fresh herbs. It’s comforting & delicious and keeps you full for hours! What really makes this recipe come together is wholewheat pita bread or Persian “sangak” bread – you can grab this from really any Persian shop around town. Now, if you’re craving something sweet, I’d highly recommend this Vegan Chocolate Chip Banana Bread recipe. Think of it as a homemade afternoon snack!

Made with whole food ingredients, this recipe has been a staple in my home for the past few weeks. When your Banana Bread is ready, make a hot cup of tea, unwind, and enjoy!

Next we have a quick and easy 25 Minute Chili Oil Egg Ramen – this makes for a delicious and filling lunch.

All cooked in one pot, with greens, and an egg. For a little heat, Half-Baked Harvest suggests spooning over plenty of spicy chili garlic oil. You can grab this mouth watering recipe here.

Now onto a dinner, we have Sheet Pan Greek Garlic Butter Chicken and Potatoes. What a name!

This recipe from Half-Baked Harvest is beyond flavourful and is sure to be a hit. Oregano seasoned chicken roasted with butter, lemons, garlic, and baby potatoes, topped with crumbled feta cheese and a tangy, salty, olive dressing. This sheet pan dinner comes together easily, and is a touch buttery, colourful, and incredibly delicious!

If you didn’t know, cooking everything together on one pan actually allows for more flavour to really penetrate everything from the chicken, to the potatoes, and finally, into the dressing. Ready to give this recipe a go? Click here!

I hope you thoroughly enjoy these recipes over the weekend. Have recommendations on what I should try in the coming weeks? Comment below, I’d love to hear it!
